Very dry with a straight baking blend sub, I will try again, and cook it for less than a full minute, that might help.
Baking blend is an even blend of flax, almond and coconut (along with extras). So based on this recipe that would be 3x more coconut flour than she calls for, which is a pretty thirsty flour. I’d guess if you sub BB, you’ll need to add a bit of water, say a tablespoon?
No, I don’t think that’s true? THM baking blend is FP, so it’s not 1/3 almond flour. It also has a good amount of oat fiber, which is VERY thirsty. I don’t disagree that it’s drier than this recipe’s flour blend – really, it’s drier than every other on-plan baking blend I’ve seen – but that isn’t why.
Fwiw, in most recipes I’ve seen, people just use less of the THM baking blend.
If using baking blend I’d definitely add a tbsp of water.
